Do you know the difference between a crumble and a crisp?
I’m assuming the authors of Cooking Vegetarian do. After all, the second edition of their cookbook features a recipe for apple pear crumble.
B.C.’s Joseph Forest and Vesanto Melina wrote Cooking Vegetarian, which John Wiley & Sons Canada published in 2011. In 2012, Book Publishing Company released the cookbook in the U.S. under the title Cooking Vegan.
Recently, I baked an apple pear crumble, using the easy recipe in the book. The ingredients included rolled oats, walnuts, orange juice, maple syrup, orange peel, cinnamon, nutmeg, apples, pears, lemon juice, and raisins.
Admittedly, my crumble turned out a tad watery. Nevertheless, it provided an adequate base for vanilla soy ice cream—mission accomplished.
