Getting your hands on a vegan and gluten-free cake in Vancouver used to be a challenge. These days, however, you can order such a dessert from Edible Flours or Memento Cakes, pick one up at Choices Markets Rice Bakery, or buy a Chi Cake.

The Mad Hatter Bakery & Cupcakery, started up last year, offers another option. Vancouver resident Angela Webber’s home business specializes in baking vegan and gluten-free cakes. Visit her blog on Tumblr and you’ll see several examples of colourful cakes with impressive decorations.

Webber, who is studying holistic nutrition, also makes cupcakes, cake toppers (ducks, mermaids, backhoes, and more), and sugar paste flowers. She uses whole-grain ingredients as well as coconut sugar, coconut oil, avocado, and banana.

One day, Webber hopes to open her own cake studio or bakery café. But, for now, you can order her custom cakes and cupcakes (for pick-up only) via the email address on her blog.
